Bangin Broccoli Chedda Soup

There’s nothing subtle about this Bangin’ Broccoli Cheddar Soup — it’s the kind of bowl that makes your taste buds high-five each other and your bones hum a little happy tune. Thick, cheesy, and unapologetically cozy, this soup doesn’t just warm you up — it hugs your insides like a clingy ex who suddenly learned emotional intelligence. It’s got that sharp cheddar attitude, tender broccoli bits that act like they belong, and a creamy finish that makes you wonder why you ever settled for basic soups. Grab a spoon, maybe a blanket, and prepare for a flavor cuddle you didn’t know you needed.

 

Ingredients

  • 3 Meduim head of Broccoli (cut in medium and small pieces)
  • 250g / 1 whole Onion (diced)
  • 200g / 2 medium carrots (graded)
  • 20g / 4 cloves of Garlic (minced)
  • 4 Tbs Butter
  • 20g / 3 Tbs Flour
  • 1 cup Heavy Cream 
  • 1 Cup Milk
  • 2 Cups Chicken or Veg Stock
  • 8oz Sharp Cheddar Cheese (graded)
  • 3oz White CHeddar Cheese (graded)
  • 4 Tbs All Season Banger
  • Bag of Steak Chips to make Beef and Broccoli Chedda Soup

Directions

  1. Pre heat ovent to 400 degrees. Cut Broccoli into medium bite size pieces. Put broccoli In a bowl, add neutral oil and 2 Tbs of Banger season to broccoli. Mix well. slide in oven for 35 minutes. 
  2. Dice Onions, shred Carrots and Mince Garlic. In a pot over medium heat, toss in 4 Tbs of butter. Once Melted add carrots and onions. Cook down for 6-7 minutes until soft and translucent. Add minced garlic and 1 Tbs of Banger to season. 
  3. After 4 minutes of cooking garlic add 3 Tbs of AP flour. cook for another 4 minutes to cook out the chaulky taste of the flour.
  4. Pour 1 cup of Heavy Cream and 1 Cup of milk into pot.
  5. Optional - using a blender or stick blender. blend all components in pot until smooth and pour back into pot. Add 2 cups of chicken or veggie stock to pot and cook down for about 10 minutes over meduim heat stirring contunously so bottom of pot doesnt burn. 
  6. In small batches add a handful of cheese into pot. Make sure cheese is melted before you add more.
  7. Once broccoli is done add it to the pot. Mix well. Add more banger seasoning to taste.
  8. Pour in serving bowl and crumbled Peppercorn Steak Chips on top to make it the ultimate BEEF & Broccoli Cheddar Soup!!!
  9. Makes about 8 cups of silky delicious soup.
