Korean Cauliflower Lettuce Cups

KFC aka Korean Fried Cauliflower from Gordon Ramsays Food Stars episode 6! If you saw that episode you know it was a hot mess and the only thing that wasn’t was these delicious Korean Cauliflower Cups that you can now make at home! 

 Ingredients

Batter

  • 1/2 Head of Cauliflower cut into florets/bite size pieces
  • 1/2 Cup/67g Corn Starch
  • 1/2 Cup/75g All Purpose Flour
  • 1/2 tsp/3g Baking Powder
  • 1/2 Cup/120g Water
  • 1/4 Cup Vodka

Glaze

  • 4 whole or 14g Garlic Cloves (minced)
  • 1/4 Cup/60g Soy Sauce
  • 1/4 Cup/60g Mirin
  • 2 Tbs/20g Brown Sugar
  • 1 Tbs/7g Corn Starch
  • 1 Tbs/13g Water
  • 2 tsp/10g Gochujang

Garnish

  • Lettuce for cups
  • Sesame Seeds
  • Julienne Carrots
  • Green Onions 

Directions

  1. Cut Cauliflower in half, cut into florets or bite size pieces.
  2. In a bowl, mix all ingredients for the batter until smooth and had no clumps
  3. Add cauliflower to wet batter. Be sure to cover all surface area of the cauliflower
  4. Pour frying oil in a pot and bring up to 350 degrees.
  5. Gently place battered cauliflower in oil and fry for 6-7 minutes or until GBD (Golden Brown Delicious)
  6. Take out and place on baking rack.
  7. In a sauce pan add all Glaze ingredients and cook for 1-2 minutes. Just until it starts to bubble and cut off the heat
  8. In a bowl pour the Glaze and add cauliflower, 5-6 pieces at a time not to over crowd the bowl.
  9. Grab a head of iceberg lettuce and peel off a few layers to use for cups.
  10. Place glazed up cauliflower in lettuce cup.
  11. Add Sesame seeds, Carrots and Scallions for garnish.
  12. BOOM!! KFC aka Korean Fried Cauliflower!
