Smoked Chicken Salad Sandwich

Biting into a chicken salad sandwich in the summer feels like catching a breeze in sandwich form — cool, creamy, and just chaotic enough to keep you guessing. One second you’re chilling with tender chicken and crisp veggies, the next you’re dodging a rogue grape like it’s an Olympic sport. It’s sunshine between bread, and honestly, it’s the only drama I want this season.

Ingredients

  • 1 Whole Smoked Chicken or 2 Breasts (only using the breasts)
  • 1 Cup Romesco Ranch Dressing
  • 1 Cup Chopped Celery
  • 3/4 Cup Chopped Red Onion
  • 10-12 Pickled Sweet Pepper Rings
  • 2 Tbsp Chopped Parsley
  • 2 Tbsp Chopped Dill

Romesco Ranch 

  • 2 Red Bell Peppers
  • 2 Garlic Cloves
  • 1/2 Cup Toasted Almonds
  • 3/4 Cup Buttermilk
  • 1/2 Cup Mayo
  • 1/2 Cup Sour Cream
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Chopped Parsley
  • 2 Tbsp Chopped Dill
  • 1.5 Tbsp All Season Banger
  • Hoagie Roll
  1. Roast Bell Peppers over open flame, once charred to shit place in a bowl and cover with plastic wrap to steam. After about 10 minutes use a cloth or your hands to wipe off the charred bits and de-seed. its fine if you dont get em all.. its flavor. Whatever you do, DONT run under water, youre literally removing flavor. 
  2. Place in blender with toasted almonds and garlic. Blend until smooth.
  3. Set aside to cool down
  4. in a seperate bowl add all the rest of the ingredients, mix well with whisk.
  5. once red pepper sauce is cooled down, add it to the ranch base.
  6. Boom! You got Romesco Ranch. Cover and store for up to 3 weeks in frig

Quick Pickle Peppers

  • 4 Sweet Peppers
  • 100g Water
  • 100g Apple Cider Vin
  • 20g Granulated Sugar
  • 10g Salt
  1. Slice sweet peppers to desired thickness 
  2. In a mason jar, place peppers and add rest of ingredients
  3. Cover and shake well. Let sit at room temp for 30 minutes then youre ready to use.

Directions

  1. Smoke chicken to 165 degrees internal temperature, Once cooled, shred chicken and apply 1 Tbsp of Burger Banger Seasoning. Mix well and place in bowl
  2. Add Celery, Red Onion, Dill, Parsley and pickled peppers to bowl. Mix well.
  3. Pour about 1 cup of Romesco Ranch in the bowl. Mix well.
  4. Toast hoagie roll
  5. Scoop Smoked chicken salad onto toasted roll. Add springs of dill to garnish and Boom-shaka-laka!! Smoked Chicken Salad Sandwich is Served
